    I chunk and Grind it all. I've never seen glands, clots or any other meat imperfections in the final sausage. Trimming is a matter of preference. My 2 cents

    IMO the hotdogs you mentioned you liked have very little or no coriander in them so my guess is its coriander, not mace or nutmeg that you are having issue with. I would substitute chili powder in place of the coriander in a recipe for a New York style hotdog and give that a try. My 2 cents

    Original Greek Pepper Mill This is the Mack Daddy of pepper mills. Had mine for over 15 years. For big jobs (like brisket) you can remove the handle and put your drill motor on it.
