    did you cook them competely from raw to complete in smoker? over in sausage section, many folks will warm smoke then finish poaching in water bath to safe IT for a snappy casing. memory serves a start to finish in smoker will usually give ya tough casings. lots of info in sausage section on it.

    hahaha, come on over.  Flights have been ok so far. the security sucks though. very similar to a saturday at walmart, 50 registers, 8 checkout people and 300 waiting to check out. other than that, smooth sailing. im in manila for 2 more days then on home. at least i have wifi at the hotel.

    Marjorie, above, post #57, true value hardware. the ones i got last year were mesquite (very heavy smoke flavor) chunks. i believe you will have to split them down into smaller pieces to use them on a stove top.
