Well to start off he is gonna need a thermometer so he know when the meat is done. I would suggest a Maverick ET-73 dual probe thermometer- 1 probe for smoker temp and the other for the internal meat temp.

A friend show me a trick he uses to clean his grates from the grill..... He uses heavy duty oven cleaner to spray the grates and then puts them in a black trash bag and sets them in the sun for a while. Take 'em out and stuff comes right off!
I have a 30" mes black on order and waiting for it to arrive and I am trying to prepare myself so I can jump into it when it gets here. The only ways to do it I guess is 1- through the door OR 2- through the vent. Right?
Hello all, I have been reading all these post in here for about 2 months now & my MES is on its way and I can't wait to get started!! I feel like I am a pro already with all I have learned from everyone here. I have my ET-73, wood, etc all ready to go!!! Just wish the MES came already...
