    I decided to wrap the brisket to keep it from charring up since I'm going smooth at about 315. I also just wrapped the ribs, but I used butcher paper instead of the usual foil. Everything's coming along well. I'll put the beans on in a half hour.

    I need help fast please!

    I'm not at all familiar with gas smokers but I'd just put one in, check in an hour and see if it's burnt up and if so, throw another one in.  There are a lot go members on here who can weigh in with far more knowledge than I can, but that's my 2 cents.

    I usually get the IT up near the 160 range then I foil wrap it in an aluminum pan and put a ton of butter on it. Then I cover it and give it another hour or so. Smoked turkey is my favorite.
