I know this is an old post but, I tried this today with my MES 30 and half way thru the process I realized the 40" has a 1200W element and my 30 has a 800W. I assume that would make a significant difference on times, temps, and skin texture.
On my MES 30, I do a burn off after the cook is done and also preheat prior to the next smoke. I found for me its best to set the preheat to max 275 and readjust after its loaded and brought to the desired temp (normally 225-230).
I have no problem with my Lumber Jack competition blend in my A-MAZE-N pellet tray and MES 30. I do nuke them for a minute or two prior to using. No mailbox mod as of yet.
I wouldnt soak the chips, that just creates steam. I highly recommend the Amazen pellet smoker trays that can last 11-12 hours per fill. I switched over last year and its been a great improvement with my MES 30!
