    Meatloaf Question

You wouldn't get a lot of smoke penetration if you use a loaf pan. Why not just make a fatty without the bacon wrap? Same ingredients and basic process as your meatloaf, just no pan.

    Help with ribs

Easy, After the 2 hours of cooking while wrapped, just pull them from the smoker and let them rest.  Keep them wrapped tight until you're getting ready to serve.  Then, about 30 mins before you're ready to serve, unwrap them, glaze them and put them on the grill to caramelize the glaze. They...

I'm ready to build a smoker but i need some help

So, I'm ready to start my first smoker build but i'm having trouble finding a tank to begin with. I want to build a 50-75 gallon reverse flow rig that I can put on wheels to make it easier to move from the garage to the patio. I already have a large 125 gal tank smoker that isn't very...

Building a reverse flow out of a 60 gallon air tank

I love the design of your smoker. I want to build a similar size rig, but something on wheels so it can go in and out of the garage. Keep up the great work and keep the pics coming.

    Maverick Model ET-732

I know, so why would it show me LLL when the probe was sitting on the grate and the smoker was rolling at 230 degrees?

    Maverick Model ET-732

Has anybody else had problems with their temperature probes?  Just this last weekend, my bbq probe showed LLL. Would the probe getting wet cause this?  This is the first problem I've had with the 732, so I'm probably going to just get a new probe unless this has been an issue with other users.

    new smoker

When it gets that cold, I find that I need to add a little more insulation to my MES 40.  I went out and bought some insulation board, cut it to fit and simply taped it together to form a box around my smoker.  I used a scrap piece of plywood to cover the top and keep it from blowing around. ...
