    First smoke ever and I chose to do a brisket..

    Looks great for doing it your 1st time. I have a ECB and just got a Weber Grill from a friend yesterday.  I will be attempting a brisket on either of these units soon.

    I have learned the hard way with chicken and the ECB.  In order to get good tasting chicken with the ECB using charcoal, you will need to get the temp high. 275-300 at least.  The ECB I'm starting to realize is great for doing Pork Butts,Ribs and Tenderloin. Until you mod your ECB like Bob did...

    First time doing butts! Sink or swim today.

    The great thing about doing butts is they are forgivin.  If your temp is to hot - no worries. If the temp is to low - add more fuel to the fire.

    I say since it's for Thanksgiving they pay for the bird and smoke it for free.  JMO
