First whole chicken last sunday. Qview and a question.

Chicken skin won't crisp at normal smoking temps.  You have to finish it off around 300 if you want crispy skin.

    Purchasing the perfect smoking device.

FYI, I'm an electric (masterbuilt) user and have seen people mention that Canadian Tire offers an electric smoker in the electric smokers subforum.   http://www.canadiantire.ca/AST/browse/2/OutdoorLiving/BBQs/Smokers/PRDOVR~0851153P/Cuisinart+Electric+Smoker.jsp?locale=en Don't know anything...

MES MODS and AMNPS: better smoke when MES is OFF

Steve, I think it's just a matter of figuring out proper placement and ventilation in the smoker.  My model has very little ventilation in its design. I don't think that could be engineered away in an aftermarket smoke generator like AMNPS. If fire isn't getting enough air, it's going to go...

MES MODS and AMNPS: better smoke when MES is OFF

I should have mentioned that I did microwave for 1 minute prior to lighting.  I actually lit both ends and blasted them for a good 45 seconds then let them burn while I rubbed down the birds, which took a good ten minutes.  The door opening could definitely be a factor, though I opened it about...

MES MODS and AMNPS: better smoke when MES is OFF

I have the 30" analogue MES with just the one small vent in the right upper rear.  I have been struggling with keeping the AMNPS lit.   Additionally, even if it stays lit, very few of the pellets turn to ash.  Mostly, they just turn black but retain their shape.  I suspect this is from...

    Yoder YS640 and 480 Owners

Good info!  I plan on getting a Yoder when I get back CONUS and will keep your post for reference, just in case.

door gasket on MES 30 analog smoker

I think Dave might have not noticed the "analog" part of the subject...?  My MES 30 analog doesn't have one and I'm pretty sure it's not supposed to... but I could be wrong.

First smokes & chicken & ribs together?

First thing to remember for safety sake is to put the chicken under the ribs.  I have done ribs and chicken during the same smoke.  3-2-1 method on the ribs, adding the chicken with about 4 hrs left on the ribs.  Cooking to internal temperature, it shouldn't dry out.  Many brine their poultry...

    First time boston butt

I would plan on 2 hours/lb just to be sure they're ready when you are.

    AMNPS In 30" Analog MES

I have struggled with keeping the amnps in mine.  As others have done, I drilled a hole in the side and fed an aquarium pump into it.  This seemed to help along with not tightening the door closure all the way down to allow more air flow.  I dry my pellets out in the microwave and let them burn...

Bad Q, ummm it doesn't have that taste!

I have had some problems keeping my AMNPS going with water in the tray so I stopped using water.  Lately, I have been able to add water 45min-1hr into the smoke once the AMNPS is established.  That being said, I'm not sure that I can tell any difference between water and no water.

    10lb Boston Butt

I have taken boston butt off @ 185 and it pulled easily after resting for an hour. Probably not ideal, but time was running out and I have no complaints about the product.

    Boneless Pork Loin

Do you have tenderloin packaged in two parts or a loin? In any case, I assume that it is a relatively lean cut and is not something that you would want to pull.  I have never smoked the larger loins, but the tenderloins packages in pairs are delicious sliced.  I take them off the smoker around...

    Rib Racks

I'm sure I'm missing something completely obvious, but why can't you just orient the rack the other way on the grates?

    Lowes Gift Cards

I don't know about you, but if I actually try to add it to my cart and checkout, it indicates that's it's not available under any delivery method.  Magnum, in your situation, if you're happy w/ the red bullet, I would wait for something else I needed at Lowe's to use the cards on.  If you're not...

    Maverick ET-732 Question

I'm almost certain that you could use 2 meat probes simultaneously instead of meat and bbq.  Not sure about 2 different units at the same time but I'm guessing that they will sync separately so long as you're not turning them on right at the same time.  I just got a 2nd meat probe from Todd and...

    Lowes Gift Cards

If it has to be Lowes, what about this?  http://www.lowes.com/pd_143389-38465-32930_0__?productId=3646244&Ntt=master+forge&pl=1&currentURL=%2Fpl__0__s%3FNtt%3Dmaster%2Bforge&facetInfo= Mixed reviews, and haven't heard much about it on this site, but it might be worth checking out.

    AMNPS and MES

I have the analogue version that I suspect Wally has.  At first I had problems with the MES burning too quickly. Then i added some heat deflectors with aluminum foil and pans and then it started going out.  I think part of it may be that the pellets when I first got them were dry and fresh and...

    Problems coming?

That's the same unit I have.  You can make the door close more tightly by adjusting the clamp. There will still be some leakage, but I don't see how that is a problem.  Adding chips to the smoker was a pain so I got an AMNPS.  I have had to play around a bit with heat shielding and air flow to...

    MES 30 & Sand

Yes.  You're not going to have any luck getting crispy skin, water pan or not, at typical smoking temperature.  Before getting the MES I was accustomed to beer butt chicken on the propane grill with perfect skin, but without that smokey flavor I have grown to love.  I'm still experimenting, but...
