    Health Insurance Nightmares

I have a handful of friends that are in the same boat. There are some preliminary numbers out there and prices without subsidies come with some sticker shock for some states. Questions to any and all: When I had ACA coverage, we shopped the various Marketplace plans, made a selection... then...

Carver Ham Steaks ~ With Second Smoke

These were $3.28/lb which is around $12 each. That is higher than last year as they were in the $10 to $11 range. They are perfect holiday gifts, easy to slice and the right size.

Carver Ham Steaks ~ With Second Smoke

The bottom side has some factory indentations from their smoker. I trim the high spots level. Also, the corners might have some tags of fat, so I trim those down. Otherwise, no additional seasoning. I'm a black pepper fan... so that could be an option.

Carver Ham Steaks ~ With Second Smoke

So, these hams are fully cooked, and there is usually an ounce of liquid in the cryovac package. The low pit temp will dry the surface, and a small amount of juice will sweat out, but that is why I limit the smoke time to 40-45 minutes. When sauteed, you just heat through. For soups and such...

Carver Ham Steaks ~ With Second Smoke

Carver hams have showed up early this year at my Sam's Club. Typically, I score them and follow with a second smoke for a little more flavor. These are boneless hams around 4#. Today, I changed gears and decided to slice two hams, then do a 45 minute "second smoke" on the slices. I vacuum seal...

Is there any good reason NOT to buy a GMG Peak 2.0?

How finnicky are the GMG pellet grills when it comes to vacuuming out the pellet pot? I have seen a few reviews on the Peak 2.0 and it has some nice features. I like the 12V power option too. I'm assuming you can power the grill from a rechargeable jump pack?

    Health Insurance Nightmares

I started ACA when there was an income cap and penalty. Then my last 18 months fell into the less than 8% of your MAGI provision. But you are correct... many expect a rise. And, if I read it right, the current subsidies expire at years end, and if not renewed, the old version of ACA still...

    Health Insurance Nightmares

I had a tele-consult scheduled for today with my Medicare Part D advisor, but she could not login to Medicare (dot) gov. However she did mention that pricing for several Part D plans is increasing. I currently have CIGNA for $16.50/month. For 2026, the price changes to $66.50. Guess it's...

AI is so full of ^$&$%#%

AI was responsible for recommending bad travel routes last winter in Wyoming. I-80 is 400 miles long in the state and sections often close unexpectedly due to snow or black ice. AI was recommending smaller county roads, some of which are not maintained on a regular basis. AI enthusiasm in the...

Texas Style Turkey Breast ~ Blue Light Special 😄

When Doc Holiday was still alive I was on vacation and stopped at the Rudy's near Sea World. Doc was handing out samples of the turkey, and visiting with customers. We bought a pound to go for sandwiches.

Most or Least Favorite School Lunch?

In grade school (also in the '60's), we had the option to take a sack lunch, or buy a cafeteria lunch via a punch card. The worst lunch option at school.... for me was fish sticks on Friday, with mac-n-cheese and some unknown dessert. I lived on the Gulf coast, and we enjoyed fresh fish or...

Texas Style Turkey Breast ~ Blue Light Special 😄

A couple of weeks ago my Kroger affiliate had an incredible deal on frozen turkey breasts (.99/lb), and Mrs ~t~ picked up two. We thawed one for a test run. First, I removed the skin, and boned out the breast meat. The carcass was seasoned and baked, then turned into a turkey pot pie and bone...

    chopsaw's Boston Bacon

To be more precise... Boston butt bacon. This adventure innocently started in a random thread when I mentioned that competition BBQ cooks coveted a small muscle group in a pork butt, which they call bacon. Below, you can see that small muscle group, located in the fat cap on the outside face...

Oversized Load, Just Had To Post!

I live in open pit coal mining country and have seen similar things several times. In reality... only the bed of a haul truck will fit on a semi trailer, the truck gets assembled at the mine site. About 15 years ago I had a client that fabricated dragline buckets for an Australian company...

Possible Nitrite Burn on Butt Bacon

Good to hear. It's a first for me. I like 2X cold smoked bacon too. We had freeze warnings the last two nights, so the weather is on my side. Oh boy, so true 👍👍. I love smoking them, or roasting them to serve with sauerkraut, and curing for a Buckboard bacon style product, or using the...
