Maiden Voyage of GOSM "Big Block"

Thanks everyone! I agree, Bill, that's pretty much why I purchased it......eaze of use. Usaually when I break out 'Ole Backdraft, it's an event, not just a casual weekkend smoke. Jeff

Maiden Voyage of GOSM "Big Block"

I have to say, Dutch, that's an awesome recipe! My Wife was crazy about it! Can't wait to actually use it on a regular Loin, instead of a Tenderloin! It was tough trying to get what stuffing I could in them once I had them splayed out - I'm sure with a normal sized Loin, you could stuff that...

how much $ per pound for brisket?

The Full Packer Briskets I'm picking up for my Memorial Day Bash, are running $1.58/Lb. at Wally World. Jim Minion is correct, prices will always vary dependent on your locale and proximity to Cattle Country. Jeff

Maiden Voyage of GOSM "Big Block"

Thanks Bob! The cooker may be at 225*, but the the Chicken isn't when it hits the rack. In most situatiuons, the yardbird is the last to hit the racks if you're trying to time your meal on a combination smoke. It's always wise to have your meat stacked from top to bottom - Beef - Pork -...

Maiden Voyage of GOSM "Big Block"

Well, the BB got broken in yesterday!!! Decided to put on ABT's, Baby Backs, a few Leg quarters and of course..............Earls "Stuffed Pork Loin"! First, let me congratulate Big Earl on a recipe worth trying. Kudo's my friend! The only problem I encountered had nothing to do with his...

    New GOSM Big Block!

Earl, the stuffed loin looks like a real winner! Showed the recipe and photos to the Wife and it includes some of her favorite items......I'll definitely have to give it a shot. Thanks! Grandmaster, that looks like what I'm looking for except I'd want the pigtails included. Doesn't seem...

    New GOSM Big Block!

It's great to be back in touch with everyone, I was gettin' the DT's!!! :D Unfortunately, I don't know how long it will last due to an unwavering schedule for the next month or so..............but it won't last forever and I'll be back as usual. Thanks to everyone that has filled in the...

    Lowes BBQ Grillware Gas Smoker

You are correct, it can be a grueling process given all the choices that are before you these days. I would be hesitant to recommend an ECB if a nicer unit is within your budget. I can tell you that the GOSM "Big Block" I just purchased is twice the unit you've seen at Wally World with much...

    New GOSM Big Block!

Thanks! Good idea about the 30 pounders, I'll have to check some of the local propane suppliers to see if they have them, don't know where else I would locate one. Jeff

    Lowes BBQ Grillware Gas Smoker

Grandmaster, I am familiar with the smoker you speak. For a home unit, it seemed quite sturdy. The only drawback I immediately noticed was the capacity. If all you plan on ever feeding is your family and a few friends, then you're good! A Full Packer Brisket would never fit on those small...

    New GOSM Big Block!

Well, it was finally delivered! First, let me appologize for being absent from the Forum for so long! It seems Everyboody and their Brother is suddenly wanting Automatic Transfer Switches for their home generators in preparation for the upcoming Hurricane Season. I've been busier than a...

    Thanks to you!

Awesome job there, Cmac! Without a doubt, bring your chicken down to the bottom rack. Isn't it nice to have a place to share your "Passion-of-the-Pit"?!!!!!!!! Keep those Pit Fires Burnin'! Jeff

    Trouble with creosote

Another point which has been missed is to pre-burn the wood, thus eliminating the possibility of Phenols or Creasote. If you search some of the archives you will see how my a Burn Barrel can acheive this. This is dependent upon your access to wood and where you live. All great advise guys! Jeff

    MMM MMMM Short Ribs

J, not sure I'd agree.........even with the bones falling from the meat, it sounds more to me that you had yet to break down the connective tissue and collogen of the meat. Beef reacts differently than pork. Thermos, IMHO, are somewhat useless when it comes to ribs........sight and texture are...

    Newb with a question

Good safety point there, Brother Bob! As a Firefighter, I sometimes overlook instructing the Newbies on the obvious. Welcome to our Forum Legerdemain! All the above tip will assist you in maintaining a much better temp control. Jeff

    ABT's (Atomic Buffalo Turds)

Pretty nice job, there Brother Bear! Lady J, as Bob stated, you can use a milder variety with no problems (but where's the fun in that? :D ). Also if you decide to go the Pie Pan route, make sure it's sturdy enough to hold the pepper - the get a bit weighty once they're stuffed and...

    "OTBS"

Although he is relatively new to our Forum, he is well known to me and a fine instructor in the Art Of Smoking. Being the humble and selfless person I know him to be, he would probably never ask.........so it is with great pleasure that I "personally" nominate Scott in KC for acceptance and...
