    Favorite Wood

I have never smoked venison. My favorite all around has to be pecan. Oak is currently gaining ground though. Hickory and cherry are a really nice mix for pork. For chicken I like Apple or cherry. Sometimes a combination of both fruit woods. When I do vortex chicken I like a little mesquite. The...

    Is It Just Me?

I seem to have hashed out a bunch of negative feelings and memories with this thread. I apologize for that. Hopefully we will all find some kind of balance that we can live with sooner than later. I convinced out CIO here at the county's IT department to allow me to do a smoke in the fall for...

    Is It Just Me?

What’s with the inflated meat prices? I know I am in So Cal but dang the prices of everything except chicken has tripled or quadrupled in the last couple of weeks. I’m not sure if this is due to these hackers jacking with our country or something else entirely. Anyone have any clue? G

    Pig Shot Question?

Hey with enough cheese in the bottom to seal things up your Jack might survive after the cook was complete :emoji_laughing:

    Pig Shot Question?

I have very tasty smoked sausage from Sam's Club but this last batch of Italian sausage from Sam's was exceptionally spiced. That was why I was going to give it a try. I guess I could pre cook it a bit on my kettle and then let it cool before slicing it up for the pig shots. I am thinking that I...

    Pig Shot Question?

A pig shot is basically smoked sausage cut into about a half inch slice then wrapped with bacon to create a shot glass effect. You pin the bacon to the sausage with a toothpick and then fill the inside of the cup with whatever floats your boat. I used caramelized onions and cheese in my last...

    Pig Shot Question?

I'm just feeling a bit adventurous for my Memorial Day cook. G

    Pig Shot Question?

That is my concern. I would cook it long enough for it to be safe but will it get all shriveled up and fall apart? I love the flavor of this particular Italian sausage though. Oh well, I guess I may stick with the smoked sausage and just do the Italian sausage alone for some tasty sandwiches :) G

    Pig Shot Question?

Have any of you used Italian sausage for your pig shots? Is there too much shrinkage? I am thinking of doing some pig shots with some mild Italian sausage that I have in the freezer for Memorial Day. Due to the extra fat content, I am just a little concerned that they will shrivel up. If that's...

    Something wrong with my pellets?

I have tried the hickory blend from Pit Boss to use in a smoke tube and they burn really well for me. It's actually thin blue smoke. Even more amazing is that I tried the oak hickory blend of the Expert Grill brand and they seem to impart an awesome flavor. Same thing with thin blue smoke. Those...

My heart goes out to you and your sweet departed little lady. You are awesome for taking on a rescue and loving her as much as I am certain that you did. She is waiting on the other side of the rainbow bridge for you to come home to her. Take care of yourself and remember all of those beautiful...

Finally dusted off the 26er and fired her up.

I remember seeing him in several of your pictures. Looked like a very handsome fella. I bet it was fun rolling around with him in that big yard. I know that in my case I am down to my very last kitty. We only have cats here but it is very difficult to lose your friends. If you guys decide to...

    Tri Tip Tacos

Ouch!!! I'm just waiting for the next sale here. They are typically about $5.99 lb when not on sale. They drop to $3.99 lb pretty often. When they occasionally hit $2.99 lb I try to stock up as much as I can. G
