    Brisket rub on pulled pork?

Definitely worth giving it a shot if you have already enjoyed it on several other meats. If it isn't quite what you want then you can always add something to it manually that will make it fit your favorite pork profile of flavors. Life is too short to not try new things. G

Wood pellets on lump coal ECB

They tend to really increase the temp if you add them to your unlit coals. As they catch they burn quickly and hot. That has been my personal experience. You are much better off with a tube or tray to burn them in. You will also want to light them with a torch of some sort. After they burn for a...

    Tri Tip Feast

Believe it or not one of our local market chains has an ad for untrimmed tri tip for $3.49lb this week. I may just have to mosey on over and have a look :) G

    Tri Tip Feast

I just wanted to share our delicious tri tip from this last Sunday. I smoked this with a mix of mesquite and hickory. Since it was “on sale” for $5.99lb last week I decided $17 was worth it for a great smoked dinner. It came out succulent. I also love using these Budweiser beer battered shrimp...

Masterbuilt 1050 3rd day (returning unit)

Seems like it would be best to get them to replace the entire unit since it is brand new and has some type of out of the box construction issue. Things get by all the time in manufacturing. That's why they give you a warranty. If it were me, I would simply exchange it. The design is great and if...

Difficultly grilling on a charcoal grill for a rookie. Need guidance please.

For me there is no comparison between charcoal and gas grill for flavor. Gas is simply convenient and fast. No inherent flavor whatsoever. Charcoal is wood in either briquettes or lump form. When I grill burgers or chicken I like to toss in a small chunk of some kind of flavor wood to give it a...

Breaking News, California soon to be baconless

You and me both. Things are bad enough at the moment without another inflation forcing move like this. I recall shooting this prop down but I was definitely in the minority. G

New - Oklahoma Joe's Highland Smoker

I love my OKJ Highland but my view is a bit skewed by the ridiculously low price I paid. Mine was only $75 at Walmart on closeout near Christmas time. At 200lbs, I figure the materials and shipping would have to warrant a price higher than that. I am not going to complain. She has never let me...

Breaking News, California soon to be baconless

So, I am starting to get a feel for why pork is going through the roof here in Cali. Baby backs were $5.58lb at Sam's yesterday. That's almost a dollar a pound more than they were on the 4th. Pork butt was $2.08lb. I don't see much pork in my future at these prices. I'm not sure that I'll be...

    Yardbirds on the new WSM

Oh my Lord! Those chickens look delicious. I would dare say they look perfectly cooked. I really need to grill more chicken. Thanks for sharing. G

Just got back from the doctor…

Over the counter Niacin is quite effective for most people if you can deal with the flush. Some people are genetically predisposed for high cholesterol. If you are active and eat sensibly for the most part you should be good. Balance is always the best strategy. G

First time pork belly burnt ends

WOW! Those look absolutely delicious. I have to admit I am a huge fan of beef burnt ends but those look superb. I would most likely defer my own version to beef but I am hoping that a friend will smoke some soon and feel like sharing :) G

    HOT weather coming up...

100 degree temps are simply the norm here in the inland empire. I do my best to deal with it but I have completely abandoned my yard and it is simply dead now. I do wish that I had kept watering it a bit. All of that green grass was absorbing some of the heat that is now just radiating against...

    Store Bought Sausage

I've had great success with smoking these and the polish sausage version from Sam's Club here in So Cal. Same things with this brand of Italian sausage. They are super good off of the grill or smoker. Also bought from Sam's in So Cal. G

Apple wood, cherry, oak mix for smoking

I love the idea of those three woods. I apparently have a sensitive palate. I can't taste each of those woods distinctly. Apple has a very definite apple flavor in the results. When it burns and in the food that you eat from it. Cherry is more subtle but for most people they use it because it...

chicken legs on the Weber Kettle

Two thumbs up on those drumsticks. I absolutely love the vortex and kettle combo for chicken. It's been too long. I need to do some now. G

    Sad day

My wife just thinks of a new smoker or grill as another way that she receives delicious meats. I am very lucky to have her. G

    HOT weather coming up...

Sadly, those temps are way too common for us here in Riverside Cal. Used to only be the desert locations like Indio and Palm Springs that would get that hot. Oh no, we have joined the party. G

Pizza oven, Santa maria grill , & smoker build

That's breathtaking. What an amazing looking build. You are true master of your craft. Any outdoor cooking fanatic would be tickled pink to have that in the back yard. What an amazing center of conversation that will make with your friends. Take a well deserved bow and have something cold and...
