    What you cooking for Superbowl

It’s just going to be the two of us but we are going to make it a big bbq. Pulled pork, bbq beans, mac n cheese, and deviled eggs. We may toss in guac and chips if I can find any decent avocados. Who knows what else will worm its way onto the menu as well. Really looking forward to smoking that...

    Wings On New Grate

Nice! I got one of those grates from my wife for Christmas and what an upgrade. The steel is so much thicker. I cooked some ribeyes on there for a maiden voyage. What a difference. Excellent searing and I love that the vortex is no longer going to cook my grates. Those are some fine looking...

What are your favorite sides to serve with smoked meats?

For us it depends on the meat that we are barbecuing. We love all of these things from time to time. Potato salad, macaroni salad, baked beans, mac n cheese, cornbread casserole, baked potatoes, tater tots, fries, pig shots are fun, shrimp skewers, fresh bread, onion rings, potato skins, cheese...

    Reheating Brisket For Work

I just wanted to thank you guys for the awesome suggestions to use sous vide to reheat my smoked brisket at work today. It was just like I had smoked it five minutes ago. Perfect advice and the brisket was enjoyed by my entire team. Even our CIO was absolutely overjoyed with the results. I’m...

    Reheating Brisket For Work

I appreciate that. I really just needed that safe temp range to set it at. I wasn't sure if it would need to be over 140 or not since it is already vacuum sealed. We are all looking forward to this special lunch. G

    Reheating Brisket For Work

Just a follow up question for those that have used the souse vide method to reheat. What temp should I but setting the souse vide to for the purposes of just bringing the brisket back to a serving temp? I am thinking it shouldn't be necessary to bring it back to the 200 degree range since it is...

    Racks of ribs

I second this idea. 10 racks should be plenty unless people are ravenous at your party. Plus, I'm sure you will have other food. You won't need that many ribs to fill those bellies. I can make 3 rack of baby backs for 5 people and only use one of those racks. G

What backyard grill should I get?

It's the only reason I haven't gotten one for my 22" kettle. They are pretty much all at or over $100 dollars. That person on Etsy was selling that for $90 but you would still need a universal rotisserie unit. G

What backyard grill should I get?

What backyard grill should I get?

With a $1K budget and an already existing smoker that you are not trying to replace I would certainly strongly consider the gravity fed charcoal grills from Masterbuilt or Chargriller. I hear that the 980 design has more even cooking temps across the grid but I have neither so I can't actually...

    Reheating Brisket For Work

My supervisor has an MES 30 and I was hoping that he might be able to bring that in but if not then I have to try something else. My Instant Pot has the souse vide feature and I may consider that. I would need a second one though for the burnt ends. I know lots of you have tried similar things...

    Video games?

Video games are my second obsession next to barbecue. I spend way too many hours playing RPGs on my Xbox One. Mass Effect trilogy, Dragon Age trilogy, Skyrim, Witcher III have eaten up the better part of my last 5 years or so. My wife is so understanding that I need an outlet. She has her own...

    Reheating Brisket For Work

So, I ended up with a much smaller barbecue job for work. My team at the helpdesk wants a brisket for Christmas lunch next week. I am going to smoke it this weekend and I want to serve it sliced for sandwiches and the point will be cubed for burnt ends. I'd like opinions on the best possible...

    Anyone Own One?

I feel so foolish for leaving my TP08 in the rain. I have always brought it inside before. It was still going strong after about five years until this. I’m thinking that I will roll the dice and try this brand I’ve never heard of. I love all the suggestions. Thanks so much for responding. G

    Anyone Own One?

I’m looking for anyone with first hand experience with this thermometer? I recently killed my ThermoWorks TP08 by leaving it in the rain. So I’m looking to purchase a new thermometer. I like that this has two meat probes along with the grate probe. I know there are a couple thousand reviews on...
