    chopsaw's Boston Bacon

I commend you both on your focus and steadfastness to creating an amazing looking cut of bacon. That said, I'm afraid that's too much work for this old guy (and I once made a whole prosciutto.) Pork butt. Slice in half. Cure. Smoke. = Buckboard bacon breakfast for me.

Sausage Egg Muffin Samich - The Proper Way

I ordered an Ultimate Bacon Cheeseburger from Jack in the Crack last week. Got a few miles away and discovered there was NO bacon in it. :emoji_grimacing: Got online and left a complaint; gave my info and asked to be contacted. So far, nothing.

Felling more like fall. Time for chili.

In the Seattle school system, back in the 60's, Wednesday was always Chili Day, and it was always served with a cinnamon roll. That was back when the school kitchens actually cooked real food themselves. Man, I miss those lunches. Thursday was creamed turkey over mashed potatoes, served with a...

In the 50's now in my area. Chili might be in the making next weekend. Probably smoke the hamburger first.

Well, these may be worth a try?!

Yup. My grandparents lived there, and now my parents still do. When I was a kid, they had a tour that would take you right thru the factory from beginning to end. You could walk past all the vats and fermation tanks while the machinery was cutting and stirring the curds. (Hopefully no one...

Sausage Egg Muffin Samich - The Proper Way

Yours looks great! I'd try that any day. Safe to say, I'm not a fan of McDonald's sausage patties. For me, those things are a gut-bomb with about a 20 minute timer.

    Prime days deals

My buddy has had two of those in the past year. Both crapped out after a few months. This last time, he took out his frustration with them with his 9mm.

    Quick last minute KY trip

If I recall correctly, Four Roses, Woodford Reserve, and Buffalo Trace are in that area. All are worth a stop.

Is Heart-Healthy Bacon an impossible oxymoron?

My doctor tells me just the opposite. Drink more water to flush the kidneys out.

    Sourdough Makers Mark/Cherries

Small world. I am going to Bowling Green next April for a wedding. It would more fun in a Corvette. I, myself, am a Challenger guy.

For Sale: Reverse Flow Offset Smoker with Santa Maria grill

Great looking smoker. Looks like it's combat ready.

    Sourdough Makers Mark/Cherries

Why? Just kidding, Makers doesn't sit around my place very long. That distillery tour is great, but they are kind of in the middle of nowhere.

Am I Wrong to be Crying Right Now?

I was on my best friend's account. He passed away last year, and not only do I miss him, I miss being his unpaid intern who had access to Restaurant Depot. Great place to find meat on discount.

    Latest Bacon Project

I'd trim it off. Did you use any Cure #1, also known as sodium nitrite or Prague powder?

    What Additive Is It...?

Wow, okay, good to know it's not some chemical they use to clean the processing equipment. I've never seen it on anything I've made.

My New Recteq Backyard Beast 1200, Condo-Style

Well, I'm on the top 4th floor in a corner unit, so hopefully the smoke will just go up and away. During the outage, a few of us gathered outside in the parking lot for beers and conversation. I found out that there is a guy on the 2nd floor who also makes his own bacon. Not sure what kind of...

    What Additive Is It...?

I've been looking at some of the great stuff you all have been making, and this thought occurred to me. What is it that gives some store-bought cured meats, like Canadian bacon or ham, that titanium, rainbow-colored effect? Always wondered if I was being poisoned?

Well, this was a turn of events.

Gorgeous! I saw some at the state fair this summer that blew my mind. Yours is right up there, too. My folks went thru a succession of trailers, but this resembles the one I spent much of my youth in. Looks pretty pitiful compared to the new ones.
