Rinse it and cook/smoke up to 165/170. I think you are ok. Did you flip and turn every day during the cure? How thick is it.. Figure 1/4" per day for the cure to be good. What you are seeing is probably just blood coagulation. My 2 cents worth opinion.

I like the way you rolled it out in the bags. I have learned something new. Looks much easier than extruding it thru the stuffer or jerky shooter. Thanks.

I have had one of those for at least 30 years. If I remeber right I bought it from a guy at a arts and craft booth. It is still razor sharp and my fav for bread cutting.
