drdon and smokerjim give good advice. I hardly ever smoke without the mailbox mod, and I have had no luck using the Amazen products in the smoker itself. Many times I even double up and and use chips as well as the tube or tray pellet smoker in the mailbox.
I've never injected or spritzed.
Are you putting any liquid in a water pan?
Also, someone wiser than me mentioned that they refrigerate the drippings, remove the fat, then add the remaining liquid to the pulled pork. This was a game changer.

I don't know what part of the world you're in, but I usually don't try to smoke cheese between April and October. I've tried using frozen bottles like smokerjim suggests, but didn't have good results.

I found by accident that using two pans creates thinner layers, and more smoke flavor. I also tried adding bacon a few weeks ago, and might do that every time from now on.

I'm curious, do you hang the snack sticks, or lay them on the racks? I've tried hanging, but they cook so much faster on the bottom end. I know someone is doing something smarter than me.
