    Easter Ham

Happy Easter, everyone. It was very strange watching services online instead of helping my father-in-law prepare breakfast for Sunrise Service for his church. In thirty years or so, I think I have missed out on that tradition only three times. Since we had a ham in the freezer, my wife insisted...

    Smoked venison roast

We eat a lot of venison, and I've tried multiple times to smoke it. I have never had satisfactory results. At least consider a brine that includes veg or olive oil, and don't overcook.

    Pulled Pork

I pulled this last night (early this morning) around 12:30 am. It was at 193, but I'm not the late night partier I used to be, and I just couldn't stay up any later. It was on the smoker for a total of ten hours. I rested it for about 15 minutes, threw it in the fridge, and headed to bed...

    Pulled Pork

I've made it before (probably even have some buried in the freezer right now), but she saw the pork butts in the freezer and thought she needed to add to my list of things to do!

    Pulled Pork

IT of just above 140 after almost 4 hours. I know that stall is coming, too, and it aggravates me every time. Haven't I heard that after 140 the meat doesn't take on smoke? Do I remember the temp right?

    Pulled Pork

I have a couple of pork butts in the freezer, a lot of time on my hands, and the wife has been suggesting pulled pork for a few weeks now. This butt has no bone, and I believe it's the other half of one I used for sausage meat a couple of months ago. Yesterday afternoon I rubbed it with yellow...

Quarantine Smokes (Baby Backs, Beef Short Rib, Old Fashioneds)

Wow! I can't wait to hear how the smoked simple syrup turns out. I might be seeing a lot more old fashioneds in my future.

    Sad Day at HalfSmokes House

One of the saddest days of my life is when we had to put our kids' first pet down. I feel for you.

    Superbowl picks

I had the game development right, but missed on the final score. But I can live with that!

    Deer Sausage

I'm guessing it would have pork blended into it (and that it is fresh, not cured, or you wouldn't be grilling it). USDA says pork is safe at 145, but I'd go 5-10 degrees higher with a rest of at least five minutes.

    Superbowl picks

Chiefs will fall behind in the first quarter, but it will be close through most of the third quarter. I think Chiefs pull away late. And I really think the Chiefs' defense might outshine the 49ers defense (and I have HUGE respect for the 49ers defense). This lifelong KC resident says Chiefs 38-27.

    Hopping on that meatloaf bandwagon

I think my factory thermometer is actually dead. I was using a backup for a while anyway, now it has become the only one I use.

    wet cure?

Just because pork needs special considerations, I'd keep them separate. Inject the heck out of the deer quarter. I've done a whole bone-in deer ham before, and found all the information I needed here on this site. Good luck!

    Hopping on that meatloaf bandwagon

It turned out good, but not great. Proud of my first attempt, but I considered adding a rub to the outside, and I believe I will next time. This could have used a little more flavor. It was really moist, and held up well, even after slicing. I might even have to make brown gravy in advance next...

    Hopping on that meatloaf bandwagon

smokerjim, I think I'll follow that advice next time. In less than two hours this reached 160. At 160 IT, I cut the strings and opened the QMatz, basted with some KC Masterpiece BBQ sauce, bumped the heat up to 250, and will give it 20 minutes more with the sauce on it.

    Hopping on that meatloaf bandwagon

I lowered the temp to 225, to slow down the cook and hopefully get more smoke. The loaf is currently at an IT of 140, and I couldn't resist a peek inside. I wanted to see if it was holding its shape, and it seems to be doing fine.

    Hopping on that meatloaf bandwagon

My wife hates meatloaf, so it isn’t something we get to have in my house. She has an uncle that smokes meatloaf on a regular basis, and I have dropped hints to her that I’d like to try that. Then last week, we went out to eat and I ordered a smoked meatloaf. It was amazing, and even she said she...

    I made Bears Dried Beef..

Looks fantastic! I made this a few months ago using venison, and I would second your recommendation. Good stuff!

Rib Steak on My “Q” (Teriyaki)

I swear you can't hardly do wrong with anything you prepare. Well done. And what is it about green beans and red potatoes? I don't even like green beans, but when you plate them with red potatoes, I'm in.
