I've seen both used... not sure if one is better than other. I would think expanded metal would be faster. There's a couple builders on here that could help ya out better than me. So @seenred , @civilsmoker , @irvin78787884 can you help him out?

Alot of people here will run hot and fast... like 275 to 300. Others will run 225 to 250 F. Higher temps will shorten your cook time quite a bit. You need to cook till probe tender... there's no set temp for that. Start checking around 195, but it might take till 208, 210... everyone will be...

Buy a 2nd mes 30 or a mes 40 and use two smokers. Can find them cheap they say on Craigslist... just not around me lol! If I remember correctly 10 lbs meat in a mes 30 is about the max that works well.

If someone can document your process as you do this I think it would make a great step by step for some of our members that want to get started and just aren't sure of the process.
