Duck is (to me) kind of like a cross between dark chicken meat and pork! However you describe it, though, it's very flavorful and succulent when done well. I'm still suspicious that 80% of why this turned out so well is that I used @pops6927 's brine... :)
Well, I learned quite a lot over the weekend with this little experiment! First and foremost, though, was that Pops' brine is the BOMB. :) This may have been the best tasting duck I have ever eaten, and I put most of that down to the brine. Even after fighting with the COS in high winds and...
Hi all,
We had an insane date night on Tuesday which included a trip to Rasika Restaurant, where we had probably the best duck dish I, at least, have ever had (vindaloooo!) This got us both thinking about how much we like duck when it's awesome and how horrible it is when it, well, *isn't*...
Thanks, all. I was very, very happy that the smoker was up and running again, too! It really loses smoke where some of the dents are, though, so we had to fight with it a bit. We were ready to wrap the thing up in a welding blanket we nabbed at Harbor Freight if it got too out of control, but...
Ha! I'm not a rookie cook; just a newbie to smoking... and honestly, what I've been doing all these years with pork butts was really smoking; I just knew it as "indirect grilling." I do a pork butt probably 10+ times a year, and I try to save it, but it generally gets shared, since you can't...
Youch, I feel your pain! I've done quite a lot of on-site catering and it always seems to be a logistical nightmare! Great job getting it all handled, though... hope you were able to put your feet up for a day or two afterward!
I'll just bet they would! I make shoyu tamago for my better half... soy-brined soft-boiled eggs he ate in Japan all the time and gets cravings for.. and they turn out really awesome! Same principle, just different flavors. :)
Lovely looking lamb lollipops! I was just pondering the other day when I saw some in Costco whether they would fare well on a smoker... after seeing your pictures, that's going on my weekend shopping list. I did larger lamb shoulder steaks already, but these are my favorites. Thanks for...
We finally got a beautiful day! Time to stock up the freezer with some pulled pork (although it rarely lasts long enough to freeze any). I'm also taking chicken & dumplings to work for staff meeting Tuesday, so I thought I'd cook the bird alongside the butt with some Herby chicken rub for a...
I don't imagine much time will go by before I'm prepping another one!
Thanks! I thought these were pretty nice looking when I bought them. They're looking even better, now!
My neighbor banged it out for us. It doesn't seal up real well now, but we grabbed a welding blanket from Harbor Freight that we can drape over it, and hopefully that will help hold it to temperature. Didn't need to worry about that with the cold smoke, but we will try it out today when I stick...
