    Thanks Ryan. Extra! We never have extra. Gets ate up as it’s picked. Do freeze some but not nearly as good. Thanks for the like Ray. The hound isn’t like that. He likes the main course on top then saves a good bit of feed for later. Also good way to get his pills in him.

    Thoughts for venison pastrami internal temp

    I take mine to 140 IT then wrap in foil with beef broth. Turn up smoker to 250 for 1- 1.5 hrs but I've only made pastrami 3 times so no expert. 2 of those were hearts only.

    The valve is not that hard to tear apart to blow out. At least not on my 38207g. Just make sure to mark position of the inner piece of the valve to the outside piece.     Vacuum Sealing Jars

    What I've done a few times is use them to quick marinade meat. Put marinade in 2 separate qt. jars then put deer loin steak in. Can't be packed in. Then vacuum seal. Need to roll or shake jar a few times. Ready to go in a hour instead of 4-6 hours. Not much good for anything of size though.
