Since I got a mess of asparagus off the old patch over a 3 week period. Should be getting a lot more but lack of sun & cold weather has it growing slow. I thought I’d make a family favorite for breakfast.

I take mine to 140 IT then wrap in foil with beef broth. Turn up smoker to 250 for 1- 1.5 hrs but I've only made pastrami 3 times so no expert. 2 of those were hearts only.
Both look real good. Be very interested in details on doing the ribs? I've tried doing them in the oven but never turned out good enough for me to take time to smoke them. Yours look awesome.

What I've done a few times is use them to quick marinade meat. Put marinade in 2 separate qt. jars then put deer loin steak in. Can't be packed in. Then vacuum seal. Need to roll or shake jar a few times. Ready to go in a hour instead of 4-6 hours. Not much good for anything of size though.
