You like um exactly like I like um... damn tasty little snacks of goodness. I usually take them with a good dose of ketchup and a squirt or Tabasco, maybe stir in a little Tony C's.

This sounds like a good idea!
The tube does not have to be full for the pellets to burn. You could extend the tube and fill half full for longer smokes. Some wood types burn faster than others, you could try different wood types for different burn times.
The Kielbasa's look great. Like Richie said, you can finish them in an oven or water bath and it is easier to control the temp. Have fun and were looking forward to pics of the final product!

The only thing I might add for first time pastrami makers is to make sure you get the internal meat temperature to near 205F. You can use foil if needed and sometimes that is an option if the meat is getting dry.
If you don't get the meat to near 205F you run the risk of a tough piece of meat...
