    Sorry for the late reply. I didn't mean to be rude just been busy. Thank you ALL, very much for your replies. I will have to give the fermentation process a try. Maybe next season if I get enough peppers from the plants. This year was pretty poor. Again, thank you.

    Good to know. The peppers on the plants are about half the size of full grown ripened. Will they still mature? Sorry for all the questions. As far as salsa for the existing ripened one's. Can you suggest a recipe? By the way, Thank you very much for your reply.
