Butts have a long cook time but your going for temp not time.

out black. It could be the brown sugar has something to do with it...

I love bark. I'm trying to minimize dark. I think I have been over smoking.

My rub calls for a cup of sugar but I was thinking of cutting it to a half a cup of turbinado.
When I do the texas crunch I can introduce the other portion of the sugar along with some butter.
Does anyone use turbinado sugar? Got some today at the store instead of brown sugar.

I'm smoking on a modified brinkmann ecb charcoal smoker.
I don't know if this is the same ecb but these are the mods I did on mine.
grill and holes in coal pan, top damper, 3 bottom dampers, new thermometer,
fiberglass oven gasket to seal gap in the lid. before these mods I had no control.
These upgrades make all the difference. Go through this...
I'm getting away from the 321. Overdone. I want the perfect bite. Also striving for the TBS. Trying turbinado sugar this time.

I got the weber vents from amazon for a song, 4 inch version, thermometer from a local home store, fiberglass gasket for lid from a hardware store(don't use glue supplied with it, get a high temp gasket glue from an auto store)
