Well, it's 10:15, and I'm fuming. The Yoder YS640S just will not light. I changed out the pellets 3 hours ago, and used a "new" bag of Traeger oak pellets I picked up 2 days ago. My first thought is that maybe I got a bag of pellets the hardware store kept outside, so I scooped them all out of...
I picked up a "prime" grade brisket at Costco ... I found the most flexible, floppy brisket in the bunch. It weighed in at a little over 11 pounds before trimming. Its sitting at 9-1/2 pounds now. Last night I seasoned it up with Meat Church "Holy Gospel" rub (I love this stuff), and plan on...
We found ourselves visiting my inlaws this Thanksgiving; for the past few years my wife and I have found ourselves traveling on Thanksgiving, and not home to cook. Since everyone appreciates the smoked meats I create, I was asked if I might be willing to smoke a turkey for the family meal.
I'll...
I'm headed to Nashville in a little over a week, so I'd like to ask my smoky brethren and sistren for BBQ advice. What are the quinticential Nashville spots? I much prefer the back street, local hole in the wall joints, and not the polished downtown tourist spots. And, if anyone has...
So, I've been stalking this thread for some time now, and decided to pull the trigger, and give it a go.
I used the second generation recipe on this thread ... the one with brown sugar, as that is what I have on hand. I also opted to omit the the food coloring, and include a huge pinch of...
Dang. I have to find the Windex .. I just licked my computer screen. Great job @Bearcarver ... I'm going to have to smoke a ham now. I hold you responsible Sir!!!
Late post .... it was a busy week.....
My wife and I were invited to a dear friends labor day get together. This is a rarity, as he works for a local Police Department, and our schedules don't align often. My wife has known Officer **** and his wife for decades; I've known them for 10 years or...
I found the most beautiful 7 pound rack of beef short ribs that were just asking for a bath in smoke. I had to oblige....
After trimming the fat cap, I seasoned them up with Meat Church "Holy Gospel" rub, and gently put them in the Yoder YS640. I used oak pellets, set the temp for 275F, and sat...
@2008RN No, I opted not to get the grill grates. If I want to cook over live fire I've got a Weber kettle. It sounds interesting to grill with the Yoder, but I don't like the idea of fat and juices dripping down onto the heating element. That can't be good for it?
After doing the break in cycle on Friday, I had the time on Sunday to do my first smoke with my new Yoder YS640S. Nothing extravagant ... just a few racks of St. Louis cut pork ribs. I seasoned them up with Meat Church's Honey Hog rub, and smoked them for 6 hours with Lumberjack brand...
AAAnnnddd ..... delivery is delayed by at least 2 weeks. I was told that Yoder is falling behind on delivery expectations ... oh well. I've gone 47 years without a YS640 in my life ... what's 2 more weeks?? LOL!!!
My Camp Chef has been very kind to me, and has help me create many, many fine meals. But it's time for an upgrade.
Last weekend I pulled the trigger and paid for a Yoder YS640. I was looking at them about a year ago, and in hind sight should of bought it then. The "new" models come with...
I'm seeing a couple of different cuts, no? It looks like you've got chuck, and back ribs?
Have you cooked back ribs? Do they cook at a different rate because of the narrowing end? Just curious ... I've never cooked them, but am always curious to learn from others.
Anywho ..... your meal looks...
I agree with @Bearcarver ... for only an hour and a half they look great! As a side note, you can always ask to pick up a full rack at a later time, and the butcher will be happy to accommodate you. But for now? GREAT START!!!!
I know I'm late to the party ... my work is taking up a ton of my time.
I just had an epiphany .... I need to come work for you. Great job! Nothing helps morale more than a full belly ...
