New to smoking, looking to learn

Here's my Lessons Learned from WSM's and other bullet smokers: 1. Don't expect temperature stability like electric smokers. If that's really important to you, there are after-market thermostatically controlled fans (for the bottom air feed point) that help after 30 minutes or so, but I think...

    Always have a plan B

Jim was maybe kidding since a mouthful of char can be off-putting but if you chop up the char real fine and mix it with a vinegar- based brine (jalapeño never disappoints) along with a little commercial product you'll get a sauce that's a hit, especially with wings

    Good Cheap Grill Cover?

Cheap tarps are good for about 3 years...and they shread as they wear out leaving a real mess. But the cheap BBQ covers from Amazon now seem to last over 5 years. And the thin ones last as long as the canvas-like ones. Unlike a backpack or luggage, they only have to support their own weight...

Trying to get some airflow in my Masterbuilt 30" analog smoker

smoker elements all run at 120Vac just like kitchen stovetops run at 240Vac. The difference in power rating for an element is based on its resistance. Lower resistance draws more current at the fixed voltage of interest (120 in our case) so has a higher wattage (power) rating. All controllers...

    Trivets, etc.

For high temperature stands, I use 3/8 rebar. 20' stick for $8. My Home Depot has a shear so I can fit two 10' pieces in the car and just pay for a 20'. Bend it: over-up-back-across-over-down-back if you can't picture it in your mind. Helps to make it a little shorter than you think...

    Anyone have this Crazy Smoker?

Regardless of one's beliefs on immortality, etc, there's some truth in the biblical saying: "Yea, saith the Spirit, that they may rest from their labours; and their works do follow them." It's good to remember the Departed and their works...their skills, handiwork, hobbies, sayings and...

    Anyone have this Crazy Smoker?

Just the opposite...another chance to remember departed friends. Every time I grab one of my Dad's hand tools I think of him.

Stacking meats in a vertical smoker

The smallest minimum dimension is the brisket hence it will cook faster. Since verticals when low and slow are hotter at the top the butt goes there. I like SmokinEdge's flavor argument. Nice it agrees with the science

Is cold rolled steel sheet safe to use as a heat deflector?

Heat deflectors are all about spreading out the heat. Sit under a steel roof in the summer sun for hours and you'll be cooler even if the roof gets hot in a minute. Pellet machines use two deflectors because people do biscuit tests for heating uniformity and no one wants their machine to be...

    Butter Swim Biscuits

I'm mixing in 50% olive oil with my melted butter-rich recipes. Both for health and pocketbook reasons. Don't feel I'm suffering much for it.

    Electric suggestion?

What's the peak temp you want to cook at? Electrics are limited by both the common 15A wall circuit and the type of wall insulation they use. A better controller does nothing to address those limitations.

Favorite widely available bourbon or whiskey

Now there's a mixed drink I'm going to try. If the typical rye contains an overwhelming amount of that grain in the mash bill, no wonder an old bourbon drinker like me finds them a bit off-putting. I haven't traditionally liked ryes, but like you said we just have to fool our tastebuds by...

Favorite widely available bourbon or whiskey

I'm with you Ray. I tried ryes before and didn't care for them so went back to wheat and corn bourbons. But someone gave me a Bulleit rye shot the other night and it was pretty good. And I'm a VERY long-time WT101 fan (that's about all I drank for ~15yrs when I was younger) so I'll be keeping...

    Just a boring burger

Burgers look great! I forgot about those Famous Dave's pickles...gotta' keep my eye out for another jar. So...does anyone live in a part of the country where buffalo or beefalo is cheaper (store retail price) than beef? I love it and I remember when it was going to be the next big thing...

    Winter Car Kit

A Come-along hand winch is useful in case you're the one getting stuck. And I'd add a couple cans of pull-top stew to the added items of water and snack bars.

Q'ed Hickory Pork Roast and mashed

First batch of creamed corn pancakes was so-so. I was going for the savory vibe so included some garlic and onion powder in the mix. Even with heavy butter, they just weren't that great. Next batch, I added just a quarter cup each of finely chopped raw onion and jalapeno. The jalapeno...
