I cure and smoke backfat...while the water content is low it gets salty. But soaking it should renove most salt. Or use as-is and account for salt in fat.
Maybe pick up a side of pig from a slaughterhouse for a trial run. With these crazy times is a good idea to have a litle pork stock until the trip gets re-scheduled.

I suggest having a good breaking knife, a fillet knife, a cleaver and a meat saw. As another fellow suggested watching a few butchering videos will help a lot.

If you plan to mod it into RF i recommend buying the RF model. Unless you are a fabricator the parts will cost you more to mod. The RF model comes with a firebox basket.
