Too bad more people don't cook with wood...especially over a fire. The sounds, the sizzle, the extra flavors...minus the "off flavors" you can get with charcoal and don't realize it.
I'd imagine you had the TT facing the direction to come off first just in case. Case the potatoes looked like they had no chance of falling off even if they were faced the opposite direction right?
No I understand the point. My point is if you all want a fire then you can make a cheap pit that will prevent burns and can be taken apart after 3 days of fun.

I've had good legs and I've had good legs but these topped the charts. I don't know if it was the juices dripping from one to another or the Wild Thang rub or if it was the hot maple split fire. All I know is crispy fluffy bite through skin and savory tender juicy inside was chicken nirvana...
