Finally got a new Weber kettle

Thanks for the replies, I will play with it some more and get it dialed in. We like to grill a lot at my house so I will have plenty of opportunities to practice. Next time I am definitely only going to use one of the little baskets of coals for shorter cooks. I am just used to having to use a...

Finally got a new Weber kettle

So, Noboundaries...judging by your signature you are quite experienced with these grills. Yesterday when I was doing my initial burn I lit a chimney full of standard kingsford coals and spread that between 2 weber charcoal baskets. I then separated the baskets and did the multi-zone fire with...

Finally got a new Weber kettle

I have been wanting a new charcoal grill for a while now and after reading up I decided on a Weber Kettle 22.5 one touch gold. I managed to get it for $110 since my wife's family owns a building supply store and that is their cost from ACE Hardware. I was really happy with how easy it was put...

First Fire in my UDS not working Help

Do you have your charcoal basket up off of the bottom of the smoker? Mine has little legs on it about 3". I see no reason why it won't get going, usually people have issues being too hot, not too cold.

    Gator Meat

If you got a big ole hunk of meat, I would cut it up into small strips or nuggets. Batter and fry is the best/easiest way to do gator tail. If you smoke or grill it is easier to dry it out and get tough. I have a simple dry wet dry for gator. I use plain flour with black pepper and some cajun...

    BBQ at the lake

It is a private lake just southeast of Palatka. We didn't catch a whole lot as I am not a bass fisherman but I did get a couple pictures. I prefer saltwater fishing if I have the option.

    BBQ at the lake

So for my buddy's birthday, we decided to go to the lake house for the weekend. It was a guys only weekend so that means BBQ and beer. One thing that I love about my UDS is how portable it is and easy to take anywhere. We kept it simple with just a couple racks of ribs and some steaks. The...
