    Should I Replace These WSM Grates?

    Those are in really good shape. IMO, if they hold meat then they are fine to cook on.  A wire brush and then rubbed down with an oil soaked rag or clump of paper towels and we go again.

    The last 3-4 times I have smoked ribs, I've smoked no-foil.  I will never go back.  Just smokey pork goodness.  So glad I read this thread.

    Shrimp boil question?

    Legally, here in FL, a bucket is a five gallon bucket.  I rarely catch that much.  I use a little 3 gallon bucket.  If that gets over half way full, then I'm happy.

    I did my first racks of no foil this past weekend since learning the science of the meat.  The whole family liked them better.  I did not sauce them but I will in the future.  We like a good bit of smoke as well as a light rub. Thanks to this site, I learned what really makes tough meat tender...

    Calling all Smoke Hollow owners!

    Good idea on the hot plates for low temp smokes in warm weather. For smoke, get a couple of 12" pellet tube smokers from Todd at AMAZN...... You'll be good.
