You should be allrigt, like Len said its just mill scale.
sometimes when we have a project that is going to take a lot of heat,like a wood stove,
we will do a hot load of wood thru it before painting. If it the scale is going to fake, it will do it then instead of
after painting.

I have never dealt with enamel on a dutch oven but I am sure someone here will come along and help.
The only enamel I have dealt with was on a cast fry pan, and I finally just sand blasted it off and seasoned the whole thing.

I just did 2 bellies with pops brine and they came out good.
I am going to tweek it a little to make it mine, but it is an excellent start.
I just cut my bellies into 3 pieces each, but that was just what I thought would make
for easy slicing and what fit good in the bucket.

sounds like i might be too late, but just a touch of white wine works well for us.
just add it to the crock pot after you add the meat,cover and set on low.
