Just an update: I realized I wasn't using the food probe so I decided to attach that and drop it in.
obviously I can't see where it's placed or anything but that's reading 243.
I decided to lower the temp on the unit to 220 and the BBQ probe is staying at 170.

This is my first time using the smoker with meat in it.
I'm smoking baby back ribs. 3 racks cut into 6 half racks. I used the top 3 racks. Set it to 230.

Thank you everyone for the advice. Im still trying to figure the thing out. The temperature could read 280 when set to 250 (as an example) but if I lower the temp to 247, the temp will drop to 260.

Where is the ideal placement for the probe?
Thank you I just did that. I didn't place the probe in any special place. I just kinda dropped it in.
the probe that came with the smoker registers 317 as well so something is definetly not right.

I'm seasoning my brand new smoker. I set it for 275 and according to my Maverick I'm at 330 and rising.
Is this normal? I knew there was a difference in temp but not this great of a difference.
Any suggestions?

Would you say a 1LB bag of chips would get me through a single smoke? I really want to try what comes with the smoker and then later on invest in the AMNPS once Ive perfected the smoker.
When you cooked it overnight did you have to get up ever hour to refill the wood chips?
I just ordered an MES and I am trying to gather as much info as possible.
Also, how much wood chips did you end up going through? I want to know what I need to keep on hand.
