    This is my first time using the smoker with meat in it. I'm smoking baby back ribs. 3 racks cut into 6 half racks. I used the top 3 racks. Set it to 230. During preheat it got to 230 and I loaded it with meat. I filled the water pan with warm water and room temp apple juice. I allowed the...

    Thank you everyone for the advice. Im still trying to figure the thing out. The temperature could read 280 when set to 250 (as an example) but if I lower the temp to 247, the temp will drop to 260. It seems very sporadic. Where is the ideal placement for the probe?

    I lowered it to 225 and the maverick says 257 for the BBQ probe. The food probe says 248. it is very slowly dropping

    Thank you I just did that. I didn't place the probe in any special place. I just kinda dropped it in. the probe that came with the smoker registers 317 as well so something is definetly not right.

    Hello I'm seasoning my brand new smoker. I set it for 275 and according to my Maverick I'm at 330 and rising. Is this normal? I knew there was a difference in temp but not this great of a difference. Any suggestions?

    Thanks Tom. I guess I will have to plan early morning and all day smokes opposed to overnight. Since I am new to smoking and just purchased the smoker, I really want to try the MES as is. In time I will most likely order the AMNPS.

    The first part of mine is fairly self explanatory... The TCB is for "Takin care of business in a flash" which was Elvis' moto and logo. Im a huge Elvis fan. The 77 is for my birth year as well as the year Elvis died!!!

    When you cooked it overnight did you have to get up ever hour to refill the wood chips? I just ordered an MES and I am trying to gather as much info as possible. Also, how much wood chips did you end up going through? I want to know what I need to keep on hand. Thank you
