You could grill one. If so probably best not to use raw meat (or anything else) as a filling as it may not get done. You can smoke a fattie in 2-3 hours though and get nice smoke flavor but it would be better to grill one than not have one at all.
Cut top off. Scoop out (at least some) of insides. Mix cream cheese, shredded cheddar and crab meat and stuff into peppers. Wrap with bacon, secure with toothpick and smoke (or grill if you prefer). Simple, spicy and yummy.
Welcome to SMF. Where in in S. Indiana? I lived in Columbus for a couple of years. My dad goes there often on Business. He said they had it rough with the flooding.
Great job. We are thinking of competing next summer for the first time and ribs is what we are most concerned about (is that everbody). I'm sure you guys will fix that chink in the armor.
