    fatty?

You got it. Take your favorite sausage, Jimmy Dean, Gunnoes, whatever. Roll it out flat, cover it with a few of your favorite things, roll it up, maybe coat it with a rub, maybe wrap it with bacon, then smoke it. Some popular fillings are cheese of course, onion, mushroom, peppers, eggs...

Hmmm... What To Smoke This Weekend, Suggestions?

Sounds like you guys have a good place there. I just found a local place that sounds a lot like it. Just stopped by to talk to the guy so far but they were serving sammies for lunch (mostly to college kids), I have heard they are good and cheap. He said just to call and he would get a meat order...

    brisket info

Krusher, Have you shopped Walmart or Sams Club. Those prices are high to me too. Corned beef brisket is good for sammies if using it otherwise it will be salty, even if you rinse it good. I picked up a brisket at Walmart last week for $1.67/lb, so It is just under 10 lbs and was about $16. Try...

    Sausage Won Tons

Thanks. I was hoping someone would give them a try. I usually use the hot flavor sausage. They are good and pretty easy. A little something different to take to a get together. The Wonton wrappers are so versatile, I have been wanting to try some with cream cheese and cherry pie filling. Maybe...

    newbie question about brisket

I didn't trim the last one I did, it was pretty lean. I picked this one up at Wal*Mart last week on sale for $1.67/lb. Plan on injecting and rubbing it tonight, that will give it about 36 hrs to take on the seasonings. Gettin excited!

Hmmm... What To Smoke This Weekend, Suggestions?

Oh come on, you can do it (said wth a cajun dialect). I am smoking a brisket Saturday, will be my 2nd. I agree with Piney, leftovers will be great. The Mexican market near my house should be getting in fresh jalapenos tonight, so I think ABTs are in order as well.

    Pulled Pork?? YIKES!!

lol........Glad you had a good trip. I lived in Ga for a while (Valdosta, aka. Titletown USA), some pretty good Q down there. I have eaten at Sticky Fingers in Myrtle Beach. Loved it. Q was very good but their corn muffins were out of sight, slaw & beans okay too. Smoked Wings as an appetizer...

    Fatty ingredient list

What do you like on a pizza? The pizza fattie I liked best was pepperoni, italian blend cheese, can of italian seasoned diced tomatos, onion. I used two lbs. of sausage, one italian, one regular jimmy dean. I did not wrap that one in bacon. I used the tomatos instead of sauce to lesson the liquid.

Is there any money in this???

I agree there is probably money to be made. At the comp we went two a couple of weeks ago we also lent a hand to a guy selling bbq to raise money for the local fire department. Sammies for $5 & plates (w/ slaw & beans & tater salad) for $7. He had enough to feed 400 and I figured up he probably...
