Be careful with those tenderloins (usually cook mine ~2~ hours depending on size), since they are lean they are easy to dry out. I suggest starting early. You can alway wrap in foil and a towel and they will hold that way for a quite a while (hours) but as said you need to cook to temp.

I tried this recently only I didn't let it sit that long. I used garlic (fresh) and dried Italian seasoning. It was great on italian bread with some parmesan.

Good luck . I used to live in Columbus, IN. Wasn't aware of any BBQ comps in the area at that time. We competed in our 1st last year and it was a blast. Definitely learned a lot.
