    Dust Collector Recommendations

Been awhile since I looked into to it but there was a "cyclone lid" craze where guys were making these plywood and pvc pipe lids for a 5G bucket hooked up to their shop vac. Looks like there are number of them being made now. Not vouching just giving you an idea. Can be made for next to...

    Smoked Turkey Legs

Since St. Bernardus is one of my fave beers... Go longer. Overnight works but I usually go 5-7 days on bird even if not curing. Even when injecting you need time for the salt to move from the injection site. Curing includes the use of pink salt/prague powder/cure #1/instacure. It has sodium...

Star Anise added to Italian Sausage?

I think you dang well could use a little star anise in an italian mix. Seen lots of formulas with cinnamon and the like so. Yeah, you need to sneak up on it tho. Good idea on the pics. You're not kidding! I have 8oz of the stuff and is like lifetime supply. VERY interesting stuff. That...

Star Anise added to Italian Sausage?

I will agree with @chopsaw fennel/anise seed being traditional for sausage but decided to try my kung fu. Well I'll be... Apparently it is used in Portuegese-Hawaiian stuff. No lie, sounds fantastic...

    Smoked Turkey Legs

LOOK GREAT! While I do love cured drums, they're a cold snack to me not warm meal. Pulling tenons helps but would agree the thighs are better. @chopsaw gave me this idea and it's genius if you ask me. Buy whole turkey, part it out, cure and smoke legs and wings. Oven roast or deep fry...

    French Onion Soup, My Way

NICE!!! Just about soup weather here. Love french onion soup. Had a phase where I made it often. Out of pure luck I happened to be friends with the cook who made it from famous local joint so got the scoop on theirs: dry sherry. I liked to make it with warm sliced roast beef sandwiches with...

    Masterbuilt MB20061321 – Can’t Connect to Wi-Fi (Networks Don’t Show Up)

Do not have that smoker but my Auber wifi was really picky for some reason. For giggles, I threw a wifi extender I had laying around in the garage near the smoker and it fixed the issue. We then went fiber a year or so later and new router and Auber clicked like it should. Good luck and welcome!

Texas Brisket Kit?? Whats your Take?

LOVE ours but it's not our goto store. The german stuff is killer. They also have a number of good knock offs of things. They are definitely flexing the Trader Joes connection now. Now and then you need to set ego aside... Buddy of mine owns a bar known for food. He asked me to try his...

New info on the "Philly Karen" thing

Not sure if you guys saw but this lady's name is ACTUALLY KAREN!!! Agree and am not a hardcore fan. It's kinda an unspoken rule for typical balls. Now, a home run ball of someone famous or a record or something like that is no holds barred. Here in CLE if you caught a ball and gifted to a...

Estate sale find - new kooker 25 years old

Been there done that. Do this: part the bird out with poultry sheers and fry in sections. Much better control/safer/less oil needed. I would actually cure and smoke the legs and deep fry the breasts. Best of both worlds.

Estate sale find - new kooker 25 years old

Nice score. Tons of uses for it once you get a larger pot (go SS). Brewing beer, canning, turkey fry (which is insanely good if you've never done it) My Aunt has been doing estate sales like 50 years now. Me running a title company I end up getting involved with the car titles. Started...

Do hammer drills work as advertised ?

I was taught into mortar joint as well BUT in situations like a tv mount there will always be exceptions to get it centered/proper height. You CAN use a normal drill for them into mortar, I've done it. Takes longer but it does work. Brick itself is a pretty tough job even with a hammer drill...

Smoked cured, boneless pork loin today...outer layer VERY tough/dry!

Your main job is to become knowledgeable how to prepare a cut at it's best temp. You need to learn what cuts need to go higher and which lower. There's info floating around here with it but cannot recall where or how to find it. Kinda weird at first but you eventually pick it up. Loin is one...
