Well I guess maybe I will return this therm. and get me a ET-73 That wat I won't have to spend an extra $25 for a gauge for the smoker

I went to my local meijer store tonight and saw a Taylor Thermometer looked kind of cheep, (plastic coated wire from the thermometer to the probe, etc.) So I went with a Maverick ET-81 , Says Roasting Thermometer..
Anyone have or used one of these???
I'm getting ready to mod. my SNP and I was wondering if I could make the baffle and lay the tuning plates on the Charcoal Grates or does it need to be a little higher ????
I have a SNP professional and It has a hole for the gauge but no gauge I saw post on here where someone bought a gauge and recommended it but the hole approx, 1/2" instead of 3/8"
does someone have a suggestion or don't I really need a gauge for the smoker it's self????

So if I smoke with Wood I just burn Wood logs and smoke ???

1) Do I start with Charcoal and then switch over to wood, or do I use a smoke box for the Chips ???
