Very true but it should be mentioned, so all know, that Presto makes pressure cookers from 4 to 8 quarts in either S.S. or Aluminum. Do have to mess with the gaskets but that isn't too hard and worth it if you prefer cooking on your stove rather than your counter space.- 1MoreFord

Steel, by itself, is not really an insulator and the thickness doesn't really affect efficiency. The thicker it is causes its mass and heat retention to level out the fluctuations in temps. Instead of thinking of your build as a Kamado style cooker, you might look to a Weber Smokey Mountain as your inspiration. 18" WSM's are not fuel hogs but 22" ones do burn a bit more fuel than the 18". I like to take a ham steak and season with molasses thinned with bourbon or dark rum. Then grill well above the heat source or mostly indirect to avoid burning the sugars followed by a finish closely over direct heat to get a bit of char. -

Back Ribs, Hominy and Green Chillies
Oughta give it a try. Nice change from whole kernel corn. Season with the usual suspects along with some bacon grease and bacon bits or a little ham. Of course it's an integral part of Pozole too. Good in many soups for that matter. -
