Go figure, I pour a drink and hit post reply and now you get the same reply twice. I have done it this way and it works pretty good.

Nice cabinet; cover that hole with a piece of steel, an electric heating element, cheap inkbird control, and an A-MAZE-N pellet burner and you would have something better than most box stores could offer at just north of a hundred dollars.

    Scales

Postal scale for meat and 500 gram scale for spices, my scale required a calibration weight which had to be bought separately.

    Lox this weekend

I've only smoked salmon twice; once hickory (way to strong) then alder which was great. Definitely worth trying IMO I was able to get a small 5lb bag

    Realy cold smoked bacon.

It was in the low 20's where I am and I made some buckboard bacon today I just plugged in a heating element once in a while to keep the temp up a little. I didn't get my new temp controllers installed yet so I had no heat control but you just don't need much heat. The charcoal idea is a good...

Natural Gas Conversion Cuisinart 3-in-1 5 burner grill

We used those bits where I used to work CNC drill machines. I took a few home for a project and they really break easily so you would need to use a drill press with very little pressure.

smoker recommendation for low-temp sausage smoking?

I'm not a fan of some of the cold smoke generators I had a smoke chief and hated it. It would start out with a nice blue smoke and thirty minutes later the smoker was filled with with thick yellow smoke creosote dripping from the top then would get plugged up with tar every hour, just a mess...

    Bear meat

Our snack sticks were pretty good other than that just used the burger in chili. Don't get the comparison to buffalo though unless you mean water buffalo.

    PID Design Questions

I'm not sure about the A then numbers I don't think it will give a reading on amps it just changes how it cycles on then off times as it gets closer to the set point. Connecting the neutral to that should turn on the lighted switch unless it's a 12VDC switch then it will toast the light.

    Smoking in an air fryer?

Thought I heard birds chirping, so I'm assuming he was outside and this smoker satisfied the terms of his rental agreement. Ruining your air fryer for a pound of pork doesn't make any sense at all, but my video went viral dude.

    PID Design Questions

Sounds like you'll have things covered well. Mine is more involved not sure why I'm doing it but I ordered 150 bucks worth of electric gizmos to put into the smoker. Good luck to ya or good luck to me I'll need it.
