    I too only use S&P for beef. Taco seasoning might be good when using for Mexican food. I'll try it soon.

    Looks good. What do you think about using Taco seasoning as a rub for burritos/tacos? Anyone try that?

    I have had great luck with smoking until tender, about 203* then  wrap and into the cooler for a couple of hours.

    Sounds like you're getting close to analysis paralysis. The best thing you can do is smoke often and take good notes so you can learn from each cook. Your first smoke will likely be good but you will improve with experience.

    I think you took it out too soon. Last one I did I foiled it at 160* then back into the smoker until tender, around 205*.

    Always start early, you can put the finished butts in a cooler to hold if they are finished early. I just smoked a 7.5# butt at 225*, it took 22 hours to get to 203*. Sure was good!
