    Question about Ribs

Thanks BBQAddict. I did have to adjust the cook time and they seemed to cook very quickly. I held a steady temp of around 225-250 and smoked with hickory followed up with some apple wood. The taste was excellent. I have been tweeking my rub and sauce and I think I may have found the flavor I am...

    Question about Ribs

Cool, thanks Rich. I assumed that was the case and they were definitely done. I was worried going into this because I knew there was going to be a lot more cooking room on the grates because they were pre sliced and I never done those like that before. Now I think about it, I do remember a few...

    Question about Ribs

I smoked a pack of individually pre sliced ribs Sunday and they turned out good, but I have one question. The meat seemed to be sticking to the bone more so then when I smoke full racks. Any reasoning behind this? Were they overcooked, undercooked or does this just happen from time to time?

Got the Silver Smoker Together w/ Mods...

No, as you dump the lit coals on top of the unlit coals the unlit coals will begin to slowly burn as the heat of the coals on top begin to light the coals underneath. It saves you time from having to get a chimney started and dumped ever hour or so. This method is great and it works, especially...

    Ribs Question

I am liking this idea. I thought about even doing 2/2/1 originally figuring with all the extra grill space and heat. I think I will go with a nice rub and go with the 3/2/1 and make adjustments on the fly if need be. The outdoor temp Sunday is supposed to be in the low 80's so it should make...

    Ribs Question

I was given two packs of spares already cut individually. My question is how would I go about smoking these? The one pack is 1.64lbs and the other is 1.84lbs. with about 6 ribs in each. I was wondering if anyone has ever done individually cut ribs before and how long it took to smoke since they...

    New smoker

I have a char broil silver smoker so I can not speak on behalf of having a vertical smoker, but I love mine and I love cooking with a side fire box. The up side is there are so many modifications you can make to a silver smoker and also they are inexpensive, usually $160 range. You can control...

    Foil Pan?

Like I originally said, I do not know if there is any scientific proof that the water pan does or does not increase the moisture content, it is all a matter personal opinion. I personally like the juice in the pan, especially for ribs. As far as it turning to syrup, I would think that may be...

    Foil Pan?

For a few reasons. The pan catches all the drippings from the butt and also you can fill the pan with any kind of liquid you like, preferably juice like apple, pineapple. When I do ribs especially I use a pan underneath filled with a mixture of apple, orange and pineapple juice. Many will argue...

How did you come up with your screen name?

My name is pretty boring, but..... My real name is Jack and I am, from what I believe, the only person who smokes food in southeast Delaware County, Pennsylvania. I have been on the look out for anyone else who smokes food near me to maybe join a team or start one, and can not find anyone. When...

    Greetings from MA

Dick, I have got a silver smoker. Do you by any chance have pictures of the modifications to the silver smoker you own or do you not even have it anymore? I am looking to do mods to mine as well and would love to see some of other silver smokers mods. If anyone reads this and has any input...

    New to the forum

I hear you about having to lift the lid to lower the heat. I hate to do that, but sometimes that is what has to be done. As far as moving the meat, I have the same problem too. I have seen mods with a baffle over the opening, like a piece of metal that covers the opening and aims the heat down...
