    Pellet Smoker Fridge Conversion

    I did a few calculations on pellet consumption.  Over a 5 1/2 hour smoke on some Country Style Ribs, it used a measly 1.125 lbs/hr.  I have a source for pellets in Kewaunee, WI, just 10 miles to the south of me.  He sells Lumberjack pellets, 20 lbs for $12.99....maybe $12.00, can't remember. ...

    Remember, there are no rules.  You don't have to foil.  I never foil, I dislike mushy ribs.  I like a little pull to them.  Most of the time, my ribs are pull off the bone tender, not falling apart.  The meat pulls clean off the bone.  That is just the way I, and the missus, prefer them.  Try it...

    Nope, there is enough separation in the tray that it's not a problem. EDIT:  I did have it jump rows from an overenthusiastic lighting recently.  The cure: fill the starter row, then light.  Once it's started, fill up the remaining rows.

    The old adage "You get what you pay for" applies here.  You can spend $100 bucks or you can spend $2500.  Just plan on spending several dozen hours of tweaking and several hundred dollars to get the cheap smoker to work decent.  It's up to you how much you want to fiddle around.

    BBs were great as were the CSRs.  Everything was moist and delish.  Great smoke ring.  I didn't get any more pics but will post a picture of the CSR leftovers tomorrow.
