    i double cut  them (take out every other bone) then smoke for a couple hrs. Then batter like chicken and deep fry. aka Pig wings.

    Welcome to SMF!  Get yourself the amnps and you wont have to add chips every 30 min. i love my MES 40. w/ the amnps i can do long brisket or butt smokes while i sleep.

    I bought the AMNPS and pulled the chip chute out of my MES and tossed it.  use the dust for shorter smokes and the pellets for longer ones.

    The insulation in the electrical units is not made for temps above 325 - 350.  if you put a rack in the bottom and then charcoal pan on the rack you might get away w/ using coals .i would save the cabinet for cold smoking and build a UDS or something similar.

    all depends on what type of smoker you have ? A stick burner you can use oil or lard. gas or electric i would just use cooking spray

    hey john  Welcome to SMF. I have used the MES since they came out. wish they would go back to the original design and leave it alone. MES has great customer service. call or email them and tell them your problem . they will get you the parts needed to make it work
