Yes they are real. took some time to the bacon like I wanted tried them on a smoker to long and not hot enough, next was the grill, charcoal, not to close to the heat or the cookie filling melts out to far and the bacon does not crisp.
easier to precook the bacon then wrap and finish on the grill.
I would put them over the hot spots first to try and dissipate the hot spots first. I placed them in my smoker to see what would happen as far as temp and also to get rid of the hot spots. no hot spots equals a better cook and less worry.

think I would start with just ten to fifteen first. All the bricks are for is to help steady the heat. Also if you use too many it will take the smoker longer to heat up.
My 700FB PitBoss had some rust inside of it. Wire brushed it clean then applied oil to it and did the break in on the unit. Still doing good today and that's been two years now.
I used sand in a pan covered with foil. Now I use firebrick covered in foil. The brick is easier to clean after you are done cooking and I had numerous times where the sand got "wet" from cooking and had to throw it away and get more.
This is a BBQ not a smoker and yes after the coals are going move under the grate to grill or just start the fire under the grill. After a good scrub inside and out and start with a small fire to "season" and burn out and bugs that may be inside.

The biggest I have cooked for is 40 people. I agree on the day before to cook as many as possible and then to "reheat" in the smoker to finish. Lots of help is needed , like others have mentioned a helper or helpers go a long way.

yes I do. In my fire box chamber to help keep the heat and in the smoke chamber to help keep heat and "restore" heat from opening the door to mop or flip the meat.
Also have fire brink in the pellet smoker to help with heat but is a pain when I need to vacuum out the left over ash. There again...
