KC5TPY's Slicer - The Dead, The Resurrection and The final Death

Jim.  I know I originally asked £20 for the slicer.  I also didn't get to turn it on before the weekend.  Did you give me the £20 or did I just tell you to just take it?  As I get older these things are harder to remember; especially when clouded by drink on the smoking weekend.     I thought I...

KC5TPY's Slicer - The Dead, The Resurrection and The final Death

Hello Jim.  Sorry it turned out like that.  As I said I didn't get a chance to test before the weekend, hence the "donation".  AND it was FILTHY!!!!  As folks pointed out I paid almost £200 for my new Buffalo slicer.  Maybe a good idea to hang on to it as you said.  Keep Smokin! Danny

Hello.  Looks GREAT John. If I want a sauce and need it spur of the moment I keep some HP in the cupboard.  There are different flavours.  Some added cooked onions and a squeeze of lemon help it along.   Keep Smokin! Danny

Need some advice on whether converting a T&G garden shed would be safe

Hello Buddy.  That is what I was thinking of.  Most companies use a water based treatment but I don't know what it is.  There are folks on E-Bay who build to order, maybe you could get one built without treatment.  Yes; these are pine but with the temps you are talking about and the positive air...

    how much wood to use?

Chef JJ has you covered on mesquite.  Put that stuff away for future use!  I would eat cardboard smoked with mesquite but I am from Texas and grew up with it.  Not to everyones' taste.  Think of it like liquor.  Mesquite is the REALLY hard stuff!  Hickory can be strong.  Pecan is another...

    smoking chicken

Hello.  You might know I would catch this one.  I am a heretic when it comes to chicken.  I don't do low and slow.  Simple reason is I have never had a TOUGH piece of chicken.  Dry YES; but not tuff.  I don't brine birds but I also don't use rubs.  Just my "thing". I DO see why folks brine.  It...

Hello Lenny.  Texas is pretty much the same ( or it was )  Wild and feral hogs are considered "vermin" and are destructive to farm land.  No license is needed and no bag limit ( or it was )  I have been out of it now for more than 20 years.  Trapping is also allowed. I on the other hand have...
