    Sounds like you had a great feast for your family, nice job on that steak, cannot beat a good fire sear. Cake for desert, yum. These crazy times have taught me a lot more about appreciation for everything. I took a lot for granted previously.

    Looks very tasty Doc. Great meal. I also found dry aging didn’t really add any extra taste. Unless it is really fresh and aged it seems to work.

    @smokerjim i had burn back potential when power went out on my pellet grill. The Story: was cooking at 225f all day, pulled the ribs, turned smoker to 500f, went inside and glazed the ribs. Smoker was roaring, dumping pellets to get up to heat, then bam power outage. full pot of pellets...

    @Alds Nice work. Looks tasty. I have something similar and use a charcoal bed then put lump on really just for the smoke. Gets nice and hot.

    simply run under 200f then after a few hours turn up the heat. Plenty of smoke. or if you have time on your side run at 180f for hours turn up at end.

    Thanks for sharing the recipe. I have never boiled the marinade, will try that next time. My powdered spice never stuck right. i marinade 12 hours or more, heavy smoke few hours, then in dehydrater to finish off.
