    cant beat meat on a spit, a good plan. baste regular and keep an eye on internal temp. I don’t go to hot just medium heat.

    Nice mix of cheese there. They will go great with a beer. Looks like you have it dialed in. I normally do smoked salt at the same time as cheese. It’s so tasty. smoked cheese is a big favourite around here. In winter I’ll do about 15 pounds to last through summer.

    I was Smoking 5 pieces of different meats on Christmas Day and the probe threw an error just at the critical time to check. I was lucky I had another I could use, super annoying. Just keeps saying LLL.L, any ideas? i have only used it a few times.

    I can suggest to get one with the trays, so much easier to clean and you can fit a lot more in there. They also have a great temperature controller so you can set it for what you are drying. This is one for an example...

    Very nice feast of pork for your thanksgiving. I love the flavour when cooking in a Weber kettle. I gave mine to a friend and sort of regret it after seeing your post. Great colour, what wood did you throw in?
