    Buffalo is something I have never tried, looks so damn good that meal. Cannot beat a good sear. @DocSteve - Is the meat from Wild Buffalo, does it taste like Beef?

    Damn, well at least you tried. The Temp and probe calibration is very handy, mine is spot on. For cold smoke : You can just put small fan under hopper and that works great.. But the APP with being able to set fan speed is sooo good. This is what I followed for Calibration of probes.

    so you don’t get slimy in your brine, wash the meat first Under cold water, before you put in your wet brine. if it slimes while meat in there, remove meat rinse and pop in a new wet brine.

    One of my favorites, thats a damn good price. They are so rich and flavoursome I grab them everytime I see them. As Tnjsnake says, smoke and Braise. Internal 150F, cover and add some beer or something, you will know when they are ready, they go like jelly (Around 200F +) This is how I did mine...

    Bacon (loin) cold smoked for 9 hours with grill fan set at 5%, wrapped overnight then hot smoked @170f until 140f internal. Tastes so damn good, excellent smoke profile, flavour is perfect. vacuum packed and froze.

    Damn. One thing I used to do before was just put a small desktop fan under the hopper. That gives a good enough airflow for cold smoke. Only need a small bit of draft. Hope that may help you.

    Thanks for the info @daveomak .Your bacon looks amazing. I did mine yesterday for 9 hours = 3 Tubes. I think I may have to try the tray with the Dust, tubes dont seem to last long enough. This batch I will hot smoke as well, usually run at 180F until 140F intenaI, see what you are saying...

    @Brokenhandle - Very awesome place you have. I reckon the setup you posted is perfect, with the Vintage Laterns for lighting, just makes it. LED lights just dont give that atmosphere. If that was my Backyard I would be camping every day :emoji_wink: She would have to beg me to come indoors...

    Great fire feed and the surroundings are out of this world. The fire pit is awesome, just looked at the website and may try to make a smaller version for camping. Great stuff, thanks for sharing.

    @WV_Crusader , prime model. I thought this works on choice. I might be wrong. Did you start the grill using the app? Thats how the cold smoke mode Choice appears.
