Upon thinking about it a little more, maybe if you put the chips in a foil pooch or a smoker box you could delay them actually burning a little longer.
What cooker are you using?
I have used the Jack Daniels barrel chips with good results (used mainly with beef). I just try to place them in such a manner that they smolder/smoke for a while before they finally catch fire. This usually works better when cooking indirect on my kettle versus cooking in my BGE.
A buddy of mine called me today and said he found a Smokey Joe Silver and a Weber Q 120 that he believed were marked at half price. There was a half-price sign at the display, but he was trying to find store personnel to confirm. I haven't heard back from him, but I hope I have both on the way...
Thanks for the explanation of the cut. It was labeled as a rib roast. I wasn't sure what to do with it when I first saw it, but the cut of meat looked too good not to give it a whirl.

That's a funny story.
I realize it can be a touchy subject. I personally don't like onions or beans; so, I don't put them in anything, but I can still learn something from somebody that does use them.
