I don't see a benefit to starting in the oven. I would rather start on the smoker for a few hours to get the flavor then finish in the oven to crisp the skin.
Your time will probably be a little longer than that. A 12 pounder should take 6-7 hours but if you finish in the oven that will cut...
Are these the bass pro sale ones? If so, the gen 1 has the control box on the top towards the back and the gen 2 is towards the front. There are other difference but that is a quick reference for those two. I would go with the Gen1.
I would return it for two reasons. One, the 30" is too small for whole briskets. And two, the 40" digital is one sale for black friday at a few stores for $200 which is a great deal.
Did you take some pictures of it? Poultry skin shrinks during cooking and each one will shrink a different amount. Are you cooking the bird whole or did you split it in half? Are you using a checked/calibrated thermometer? If it was only 100 degrees after 4 hours you might have a problem with...

Not to pick on you Buzzard but your numbers are misleading. You should shoot for 1/4 lb per person cooked weight, which is 62.5 lbs cooked. If you figure roughly 30% loss during cooking you get to the 80 lbs precooked.

You could heat the water on the stove, place it into a cooler, then add hot water or ice as needed to hold the temp. It requires constant baby sitting but it can be done.
I'm not sure who makes Gander's stuff but they don't make it themselves. I have looked at most of their items in store and they seem to be middle of the road quality so at those prices it is a steal.
Thanks Joe. The Wrangler isn't quite the size I was looking for (it is smaller than the OK Joe Longhorn) but I agree that the construction of it is the best at that price point.

@tropics I think if I bought two smokers I would have to move in with you as the wife would kick me out. She already thinks I am crazy for getting an offset when I already have three smokers. I just keep telling her that this is different than the others (and she just rolls her eyes).
I think you will be fine without the garlic and onion. Especially using the herbs. I did turkey breast a little while back with just S&P and it was great.
