Anyone cook with a ceramic smoker? WSM question too

Well here is my 2 cents. I looked at all the ceramic grills I could find and a major problem was cracking, especially if you cool them down too fast. And the major area was the fire bowl. And not all were ceramic, some were portland cement or other material. Then the other issue was extra's like...

    brining trout

I never brine fish. I'll marinate in a non acidic marinade though. If you use a acidic marinade keep it short or the acid will start to "cook" the fish.

    Country Style

Well I do mine a little differently than most, not really low and slow. First I heat a CI skillet with a little evoo, season the ribs, then when the oil is hot brown the ribs, get a nice char. The dump in BBQ sauce lower the heat , cover and when they are nice an tender throw them on the grill...

    Smoking with Eucalyptus

I wouldn't. Some woods when burned give off toxic fumes like oleanders here in Fl. Everyone I've ever talked with say it's not a good wood to use neither is Elm, SASSAFRAS, SYCAMORE and LIQUID AMBER. Hardwood is usually the most suitable, but do as you wish, just be careful. Also remember...

    New Kingsford Blue Charcoal.....

I've used Stubbs, not to bad in my opinion. Royal Oak lump is good too as is TruCue (Home Depot). Also, if you're smoking you have to use a natural produch without chemical binders, so the only Kingsford to use would be the competition briquetts, or Stubbs, these as far as I know are the only...
